23 Oct ZHOUG: GET TO KNOW THE POPULAR MIDDLE EASTERN HOT SAUCE
Zhoug is a fresh, spicy and fragrant herb sauce from the Middle East that is of Yemenite origin. It is a common hot sauce used as a condiment to spice things up and add extra zingy flavour to dishes or used as a marinade. It’s frequently swirled into hummus, drizzled over chicken, beef, lamb or vegetables, and stirred into soups. There is also a variation on the sauce and the way it is spelt depending on the region.
At Thievery, ingredients including green chilli, garlic, and Thai scud chilli are used to create our zhoug. The green chillies are blitzed, then transferred to a cryovac bag with garlic, and scud chillies added. It is then sealed and fermented for a minimum of 4 weeks. After waiting for the chillies to ferment, we then mouli it and pass through a fine sieve. To complete the hot sauce, spices including dried lemon, clove powder, chilli powder, caraway powder, garlic powder, coriander powder and salt to taste, are are added and blended together.
