The extremely limited Dormilona Clayface Chardonnay and Cabernet have just arrived at Thievery.

Hand picked, foot stomped and naturally fermented in clay amphora, the Dormilona Clayface wines are pure examples of top-end Margaret River varietals. There is no fining, no additives, no filtration, no pumping, no gas, but just ancestral wine-making excellence by Josephine Perry.


Only a micro batch of only 500 litres were produced, so the few bottles Thievery have managed to procure won’t last long. Make a reservation and book a table now to try it now, before it’s gone!


2016 Dormilona Clayface Chardonnay, Margaret River , WA
Surprisingly spicy scents showing ginger, lemongrass, then the cavalcade of citrus and green apple juice and a whiff of rain on warm concrete. Bright and lemony to taste, almost brittle in acid profile and yet has that texture of soft, cloudy apple juice. Has that wild edge that is so charismatic, but backs it up with electric chardonnay flavours. Lovely stuff here.


2016 Dormilona Clayface Cabernet Sauvignon, Margaret River , WA
Quite an intense perfume, blue berries, mulberry, currants, black olive, bouquet garni, wet slate. Firm in the palate, lean and long, sinewy almost but backed up with dark berry fruit and pulverised granite-like (yet slender) tannins. Chewy finish. Those tannins. Succulent wine of high finesse.
